COPA first opened its doors in November 2019—just months before the world came to a sudden halt during the COVID-19 pandemic. Despite the early challenges, we weathered the storm and quickly became a staple in St. Petersburg’s Edge District, thanks in large part to the unwavering support of our community and our hands-on, adaptive approach. Today, COPA is celebrated for its bold flavors, vibrant energy, and deep commitment to community.

In spring 2024, we reached a major milestone by expanding into our neighboring space, where our sister concept Cafe COPA was born. Located next door, Café COPA operates during the day as an independent daytime café offering coffee, breakfast and lunch - and by night as an intimate candle-lit cocktail lounge.
We aim to blend the dynamic flavors of Latin America, the spice of the Caribbean, the rhythms of Africa, all with a modern touch. Fresh, locally sourced ingredients and bold, authentic recipes create a one-of-a-kind dining experience. Beyond the flavors-the atmosphere, the sounds, the art and the people will immerse you in a fusion of culture.
