Brothers and business partners, Maxim Thuriere & Sebastien Thuriere, founded COPA in 2019 - with a simple vision, to bring the colors of their Haitian and French Caribbean culture to the heart of St. Petersburg.

COPA first opened its doors in November 2019—just months before the world came to a sudden halt during the COVID-19 pandemic. Despite the early challenges, we weathered the storm and quickly became a staple in St. Petersburg’s Edge District, thanks in large part to the unwavering support of our community and our hands-on, adaptive approach. Today, COPA is celebrated for its bold flavors, vibrant energy, and deep commitment to community.
We aim to blend the dynamic flavors of Latin America, the spice of the Caribbean, the rhythms of Africa, all with a modern touch. Fresh, locally sourced ingredients and bold, authentic recipes create a one-of-a-kind dining experience. Beyond the flavors; the atmosphere, the sounds, the art and the people will immerse you in a fusion of culture.

“cafe copa”
In spring 2024, we reached a major milestone by finally expanding into our neighboring unit. This additional space not only doubled our dining space but provided a space for a new morning concept - “Cafe COPA”.
Located next door, Café COPA operates daily as an independent daytime café offering coffee, breakfast and lunch - and by night as an intimate candle-lit cocktail lounge.
